Sweet and Tangy Salmon

INGREDIENTS   INSTRUCTIONS

4 Boneless/Skinless Salmon Filets
Marinade:
¼ Cup Pineapple Juice (Orange or Mango juice works too)
2 T. Lemon Juice

Combine:
2 T. Brown Sugar
4 t. Chili Powder
2 t. Grated lemon Rind
¾ t. Cumin
½ t. Salt
¼ t. Cinnamon

 

Marinade Salmon for 1 ½ Hrs., remove from marinade, place on baking sheet sprayed with a little Pam (or other spray)



Coat entire top of Salmon filets in spice/sugar mixture on one side only. Place in 400° oven, bake 15-17 min.

Note: T. = Tablespoon, t. = Teaspoon
