Fire Station 29 Classic Eggs Unknown

   
 
Note: It is important to note that ‘eggs unknown’ is just that…unknown. This recipe is just one of possibly hundreds of versions of this GFD classic. The following recipe is a standard version; use whatever you think will taste good, throw it in and have your own eggs unknown.
 
INGREDIENTS   INSTRUCTIONS

18 Pack large eggs, beaten
1 Block cheese, shredded, cheddar
or monterey jack (about ½-1 lb.)

2 Bunches green onions, chopped
1 Bell pepper, diced
1 Red pepper, diced
2 Large tomatoes, chopped
1 Package kielbasa sausage, chopped
Garlic, salt, pepper to taste

* Station 29 has 9 firefighters so we double these amounts!


 

 


Cook up onion, peppers, and sausage on med. high heat in large skillet with some oil/butter until onions and peppers get slightly soft and sausage browns up a bit. Add eggs, and spices to skillet, cook eggs until done. When eggs are done, add tomatoes on top, then cheese. Let cheese melt (don’t stir). Serve it up right out of the skillet.
