Salsa Matriciana

INGREDIENTS   INSTRUCTIONS

1 lb. Bacon (sliced in small pieces)
1 Onion (small)
3 Cloves of Garlic
14 oz. Can Crushed tomatoes
14 oz. Can tomato sauce
14 oz. Can tomato paste
1 cup Water
1 tbsp Sugar
2 tbsp Balsamic vinegar (at least)
Chicken (boneless, skinless
breast or thighs)

Salt, Black pepper, Red pepper flakes to taste

Bread/Salad
Juice
Pasta (2 lb.)

 

In a large, cast iron skillet, saute the bacon, onion
and garlic in the bacon fat. In a separate skillet,
cook large bite size strips of chicken. Just before
the bacon changes color, drain off a little of the
fat (not all of it) and add the rest of the
ingredients, and the chicken. Partially cover and
bring to a boil.
Reduce heat and simmer for 15 to 20 minutes.
Serve over pasta.
